Japanese food is one of my favorite foods. The taste is light and fresh. Any dish is suitable for lunch or dinner.

One of my favorite menus is Chicken Karaage. The savory taste is perfect to eat with warm rice. This type of fried chicken has a different texture from fried chicken in general.

What distinguishes this fried chicken from the others is the cooking process. Before being fried in hot oil, the chicken needs to be marinated first. Then, it is coated with potato flour or cornstarch.

The marinade ingredients can be adjusted to taste, but the basic ingredients are soy sauce, grated ginger, mirin (rice wine), and sake.

The choice of chicken is also important. Which part of the chicken is suitable for this dish? I suggest you to choose chicken thighs to produce a juicier taste and only use boneless meat.

The last step is to fry the chicken in hot oil using the deep frying method.

Some restaurants serve Chicken Karagee with different concepts. In my photo above, it was taken at a Japanese restaurant in Singapore.
