The most beloved American side is grown naturally gluten-free. Fries are a delicious salty side for nearly any meal. My Irish heritage may influence my love of potatoes, but I’m not alone. The average American eats about 29 pounds of fries every year.
As we know, just because food is grown gluten-free, doesn’t mean it’s served 100% gluten-free. If the same fryer is used for cooking both gluten-full and gluten-free foods, the gluten-free food becomes contaminated.
For someone with Celiac disease, a gluten reaction can occur from ingesting 1/8th of a teaspoon of gluten.
To stay safe, I treat gluten like wet paint — if my food touches it I don’t eat it.
Also like paint, cooking gluten at high temperatures cannot “burn” it off. Once contaminated it’s unsafe to eat.
That’s why safe gluten-free fries must be cooked in a gluten-free fryer.
I was amazed to hear of a food truck in the Raleigh area that is 100% french fries served 100% gluten-free! It’s even celiac safe because Not Just A Fry Guy Food Truck doesn’t cook anything with gluten.

You can imagine my delight when I food truck that is 100% gluten-free close to home. But these fries are decadent. Add a burger, or carnitas or poutine, made with gluten-free gravy, of course.
I asked why they were so adamant about only serving gluten-free food. I usually assume the owners are gluten-free, but I am glad I asked them. It was their family friends’ and neighbors who convinced them to make the truck 100% gluten-free.
They investigated the cost of making the truck 100% gluten-free and it was a no-brainer for them. They agreed it would be easier to be completely gluten-free than worry about cross-contamination in such a tiny space.
As they have expanded their menu over the last 2 years, they have continued being gluten-free. They go so far as using a gluten-free beer for cooking beer-battered toppings.
