Ingredients

For the Peruvian Chicken

  • 1 whole chicken (about 3–4 lbs), spatchcocked (or use bone-in thighs for easy prep)
  • 3 tbsp olive oil
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 1 tbsp white vinegar
  • 1 tbsp lime juice
  • 1 tbsp smoked paprika
  • 2 tsp cumin
  • 2 tsp dried oregano
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 tsp Aji Amarillo paste (optional, for authentic heat & color)

For the Aji Verde (Peruvian Green Sauce)

  • ½ cup mayonnaise
  • ½ cup Greek yogurt or sour cream
  • 1 jalapeño, chopped (remove seeds for less heat)
  • 1 tbsp Aji Amarillo paste (or extra jalapeño if unavailable)
  • 1 cup cilantro, packed
  • 2 cloves garlic
  • 1 tbsp lime juice
  • 2 tbsp Parmesan cheese (adds depth of flavor!)
  • ½ tsp salt
  • 1 tbsp olive oil
  • 1 tbsp water (if needed for consistency)

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, mix olive oil, soy sauce, garlic, vinegar, lime juice, and all spices.
  2. Rub the marinade all over the spatchcocked chicken (or thighs). Let sit for at least 1 hour (or overnight for best flavor).

Step 2: Roast or Grill the Chicken

Oven Method:

  1. Preheat oven to 425°F (220°C).
  2. Place chicken on a baking rack over a sheet pan. Roast for 45–50 minutes, until skin is crispy and internal temp reaches 165°F (75°C).

Grill Method:

  1. Preheat grill to medium-high heat (375–400°F).
  2. Grill chicken skin-side down for 10 minutes, then flip and cook for another 35–40 minutes, until fully cooked.

Step 3: Make the Green Sauce

  1. Blend all Aji Verde sauce ingredients until smooth and creamy.
  2. Adjust seasoning — add more lime for tang, jalapeño for heat, or Parmesan for richness.

Step 4: Serve & Enjoy

  1. Slice the juicy, smoky chicken and serve with Aji Verde sauce.
  2. Pair with crispy fries, rice, or a fresh salad.

A Flavor Explosion in Every Bite

This Peruvian Chicken with Green Sauce is juicy, smoky, and packed with bold, savory flavors. And that zesty, creamy, spicy Aji Verde? It takes everything over the top.
