Smoky Spicy Bean Soup with Spinach in Tomato Broth

Winter means soup season for me, so naturally I love to make hearty soups packed with veggies and plant based proteins. This recipe has everything I can think of regarding nutrients my body might need, especially while tree planting.

Thought, it ain’t as interesting as the Bastard bean soup I wrote about earlier, it’s still super delicious and better for days when you don’t have much time to cook.

With an impressive amount of protein and fiber, you also get a ton of vitamins and minerals from spinach, tomatoes and beans, and aromatics like onion and garlic (they are also helpful to prevent sickness).

This soup quickly became my favorite last planting season — it’s super easy and quick to make, delicious and light on the stomach so I ended up taking it with me on the field in my thermos almost every day.

I use canned beans, to spare time cooking and feel free to use a variety of beans, and experiment to find your favorite mix.
