Mini Confetti Sponge Cake

This is a different recipe from the typical regular cake. It’s a mini Sponge cake; to add excitement, it's a confetti Sponge cake.

Show this to your kids, and these mini cakes shall disappear within no time. It’s a great all-time snack and beautiful addition to decorate your dinner or birthday table.

I have not tried the sponge cake before; however, making swiss rolls is always on my bucket list. I tried to make swiss rolls, but I failed at the rolling process. This is something I am yet to figure out, which is still in the learning process.

During one of the weekends, I was contemplating what to make for kids, and I thought, why not try for a confetti sponge cake which is light and airy in texture. That’s how I came across Mini Confetti Sponge Cake.

It’s easy to put together, and let your kids add the sprinkles in the batter to make a fun moment; they will be proud of their creation.

You may use any mini-shaped baking tray or pan/madeleine pans to make the mini cakes; here, I have used my shell-shaped baking tray.
