Ninety Years of Excellence
A little glimpse of what I’ve learned in my family's restaurant
I want to talk briefly about how I learned to cook at my family's restaurant. I started about a year and a half ago, which is still fairly new.
A little bit of history
The restaurant has been in my family for ninety years! It is going on five generations, myself being the fifth generation.
I previously worked in the front of the house accomplishing various duties since I was fifteen. When COVID hit, I began working in the kitchen making pizza. Since we have such a wide variety of dishes I decided to step up and learn to work as a line cook. Five years ago, I would have never imagined myself in this position, but the old saying “it's in your blood” has some truth behind it because cooking came so naturally to me. One of the main reasons I decided to start cooking was to help my grandfather and my uncle, who are both huge inspiration figures in my life, plus I think I would have regretted never learning our traditional family secrets.
Do you ever feel like the universe is telling you to do something, even though you're not sure how it will work out, or if it’s your destiny to do so?
Everyone thinks the restaurant business is easy, but it is far from that, especially when the recipes are made from scratch. Our spaghetti sauce, bread, certain pasta, salad dressings, and pizza, are all homemade. Without hardwork, consistency, and passion, a place like this would not survive. If the food isn’t cooked by someone who cares, it can go downhill quickly. You can't skip steps, and you can't change much. I have learned a large amount of information just in a few months, and I am still learning every day. These are things I will carry with me for the rest of my life. Even if I decided to pursue another career, I still learned what the hands of my great-grandfathers discovered and created.
