Pesto Crusted Lamb Chops on Hazelnut-Red Wine Demiglace with Pumpkin Spaetzle
Ski vacation dinner deluxe — Day one
It was a long haul. Beginning before Christmas, I worked 52 out of 54 consecutive nights with only Christmas Eve and Day off. As tough as a grind it was, I thought I did pretty well, but a few colleagues hinted that toward the end of the marathon, I was getting a little on the edgy side.
They might have been right.
The silver lining to the unending nightshifts was that my week off coincided with the provincial family day, long weekend and the wise school boards extending that into a weeklong, prespring break. Once I discovered the fortunate alignment, I announced that a family ski vacation was in order.
Aside from anticipating the joy of carving down snowy mountain slopes, I also planned on some fine dining, except without the five-star pricing. Bunking in with my wife’s bestie and Godmother to my daughter, I planned meals to rival those of the rocky mountain resort town’s best restaurants.
Three nights with two fancy meals and one scaled-up comfort food menu had me nearly as excited to eat as I was to ski. I am pleased to report that the skiing and dining met expectations.
